Among the existing amaranth species, the most suitable for the Mediterranean area is undoubtedly Amaranthus Cruentus. In addition to not presenting any problems related to the photoperiodism, this species is morphologically more suitable for mechanization, especially as regards the harvesting phase. In fact, it forms a single apical panniculus, which allows harvesting with a normal cereal combine harvester. The small size of the seed requires particular attention both during the preparation of the seedbed and during the harvesting phase. Amaranthus cruentus is exceptional for flours (gluten-free product with great clumping capacity), the high squalene content also makes it excellent for the production of oil for cosmetic use.
